  • Plant foods have gained tremendous consideration as a significant progenitor of bioactive substances with several therapeutic advantages over synthetic drugs. Shallot (Allium ascalonicum L.) together with plantain (Musa paradisiaca L.; particularly unripe ones) holds their applications as spice/food and folk medicine. Hence, this research pursues to explore the chemical composition, antioxidant activities (in vitro), and phenolic profile of shallot-enriched plantain biscuits. Processed shallot flour and unripe plantain flour were blended in different proportions (100% Plantain (SB0), 95% Plantain + 5% Shallot (SB5), 90% Plantain + 10% Shallot (SB10), 85% Plantain + 15% Shallot biscuit (SB15) and 80% Plantain + 20% Shallot biscuit (SB20), mixed with other ingredients to prepare biscu...

  • Moringa oleifera leaf is a prominent leaf in folk medicine used to treat many diseases including diabetes mellitus. This study is aimed at determining the effects of substitution of wheat flour with Moringa oleifera leaf powder (MOLP) on physical, nutritional, bioactive, antioxidant and antidiabetic properties of cookies. Wheat flour was substituted with MOLP (2.5%, 5% and 10%) in the baking of the cookies (C1, C2 and C3, respectively), and its effects were evaluated on proximate, bioactive compounds, antioxidant, physical and inhibitory properties against α-amylase and α-glucosidase enzymes using standard methods. Also, sensory attributes of the cookies were determined using 9-point hedonic point.

  • The results indicate that the Gemmeiza-11 cultivar was the most adapted cultivar to grow in the Nubaria region. Individually, glutathione at 300 mg/l or selenium at 10 mg/l caused the highest significant increases in shoot dry weight/plant of three wheat cultivars relative to other levels. Likewise, glutathione treatment at 300 mg/l was the optimum treatment in increasing photosynthetic pigments in three wheat cultivars. Selenium treatment at 10 mg/l was better than selenium treatment at 5 mg/l. Interaction between glutathione at 300 mg/l and selenium at 10 mg/l caused the highest significance increases in total photosynthetic pigments. It is obvious that glutathione at 300 mg/l or selenium at 10 mg/l as individual treatment showed the highest significant increase in grain yield (to...

  • The awareness in the consumption of plant-based food has gained attention in the recent years. Phytochemicals are thought to play a critical role in health promotion and in the prevention and management of chronic diseases. These compounds have reported to produce little or no side effects and are thus significantly used in treating various ailments. D-Pinitol is the chief active compound found in soy and soy products. Several studies have shown the health benefits of D-pinitol such as antioxidant, anti-diabetic, anti-inflammatory and anticancer properties. In this review, an attempt has been made to review the effects of D-pinitol against diabetes mellitus in pre-clinical and clinical studies.

  • Aspergillus unguis SPMD-EGY was isolated from the soft coral Sinularia sp. and was cultivated on different media. Three broth media potato dextrose broth (PDB), peptone yeast extract malt extract glucose (PYMG), and Dox media in addition to one solid medium (rice medium) were used for this purpose. The fungus was grown under shake and static conditions (for broth media only). Ethyl acetate extract from both mycelia and culture supernatant and the extract from the direct extraction of rice solid medium were tested for their antimicrobial and antioxidant activities. It has been found that PYMG medium (mycelia static and culture static) exhibited the highest antimicrobial activity against all test microbes except Aspergillus niger followed by PDB medium (culture static and mycelia stat...
